So I am on this new wheat free-dairy free diet. It has revolutionized the way I feel. However, my kids aren't thrilled about my new health kick. They will hold off on my love-filled lunches and dinners and wait until breakfast or snacktime to fill themselves with less ideal foods. On top of this, my husband is allergic to red meat and hates any other kind of meat except fish. Meanwhile, meat has become more of a staple for me since I no longer do conventional pastas or cheeses.
I now feel like I have to make 3 or 4 different dinners everyday if everyone is to be happy and get a balanced meal. WHAT SHOULD I DO? Dear Bloggers, how do you handle food issues in your home? Please help me!! I am willing to reveal my secret method of "how to keep a mostly clean house" to anyone who can offer me a breakthrough.
By the way, cutting gluten and dairy from my life is perhaps the best thing I have ever done for myself. I feel like a new person and my former chronic conditions seem to be totally gone.

I just took Harrison to the doctor today to ask about Celiac Sprue. We have a consult for a blood panel at the hospital to find out. If so, you are going to have to give me tons of tips on gluten free living since you will soon be a pro! As for meal planning tips, I am the worst one to comment because I always cook separate items :(
Torrie, I'm sorry about your meal dilemma. I have always been a parent who only prepares one meal and the kids can learn to eat it or just not eat. But, you have quite a change of diet, I don't know what to say. Good luck and I am glad that you feel so much better.
Is it possible to just make a sort of larger meal, with something to make everyone happy? Some days one person might be happier than another, but maybe over the course of a week everyone would feel pretty satisfied?
I think there should be a book (or maybe there is) for vegetarian meals with an optional meat item you could add in. For instance you could make rice and beans, then add chicken or beef for yourself. That's the sort of thing I am always doing since I usually eat vegetarian. Somehow my husband has not gotten tired of sauteed chicken breast. Yet.
My boys are so picky and I try to supply something they like, but they can always hit the peanut butter jar or some whole grain crackers if they don't like anything I've made.
Not exactly a breakthrough, I know. Really if your goal is to keep everyone happy you're going to be preparing a lot more food than before, but you might be able to ease your burden by planning ahead really well, or maybe preparing extra portions you can heat up the next couple days.
Good luck because I know it is hard to go dairy free and especially wheat free. But when it helps your health then it is totally worth it.
